Artisan sourdough pasta maker based in Gunnedah, NSW, crafting slow-dried, bronze-extruded pasta from sustainably grown Australian grains. Using stoneground flour from regenerative farms and long fermentation with sourdough cultures, they produce single-origin pasta varieties including ancient grains like Emmer, Khorasan, and Spelt, all packaged in compostable materials.
