Doña Cholita uses an heirloom blue corn variety, the same rich, natural colour as blueberries or purple cabbage, that's been largely replaced by industrial agriculture. Their chips are made fresh in the Northern Rivers using nixtamalized organic maize flour, an ancient preparation method that makes the corn more nutritious and digestible.
